Saffron Pilaf Ricefluffy and fragrant
Butter-seared rice with onion, cooked by absorption in saffron-infused liquid and rested to keep grains separate and fluffy.

In the pilaf method, raw rice is coated in fat before adding the measured liquid. This step reduces surface stickiness, while the covered pot controls absorption. Hydrated saffron colors and perfumes the rice; the final resting redistributes moisture before fluffing the grains.

Preparation
Hydrate the saffron
Cover the threads with 80 ml of hot water and let infuse for 10 minutes.
10 minutesSweat the onion
Melt the butter and cook the onion over low heat until translucent without browning.
8 minutesSear the rice
Add the drained rice and stir for 3 minutes until the grains become glossy.
3 minutesCook by absorption
Add the infusion, 820 ml of hot water, and salt; cover and cook on the lowest heat for 18 minutes without stirring.
18 minutesRest and fluff
Turn off the heat, rest covered for 10 minutes, then gently fluff with a fork before serving.

Substitutions
Turmeric only colors and does not replicate saffron’s aroma; olive oil makes the pilaf less buttery.
Storage
Cool in a shallow container within two hours, refrigerate, and reheat fully only once.
