Chicken cacciatore is an Italian home-style braise that turns bone-in pieces tender and juicy. Browning builds flavour first; wine lifts the fond, then tomato, onion, carrot and mushrooms simmer into a thick sauce around the chicken.

Season and dry
Pat chicken dry; season with 6 g salt and pepper.
5 minutesBrown in batches
Heat oil and brown chicken in two uncrowded batches; reserve.
15 minutesCook vegetables
Cook onion and carrot 7 minutes; add garlic and mushrooms for 5 minutes.
12 minutesDeglaze
Add wine, scrape the pan and boil 3 minutes.
4 minutesBraise
Add tomato, 2 g salt and chicken; partly cover and simmer 40 minutes.
40 minutesCheck and rest
Verify 74°C, reduce sauce if needed and rest 10 minutes.
15 minutes
Substitutions
White wine makes a paler sauce; mushrooms may be omitted, with less earthy depth.
Storage
Cool within two hours, cover and refrigerate in a shallow container.
