Traditional risotto alla Milanesesaffron-gold rice with flowing mantecatura
Milan’s golden risotto, toasted and cooked gradually with broth and saffron, then emulsified off heat with cold butter and Parmesan.

Risotto alla Milanese is defined by saffron color, gradual broth absorption and a flowing all’onda finish. The rice stays al dente while butter and cheese emulsify the cooking starch.
