French meringue is simple but sensitive to fat, moisture, and the speed of sugar addition. The bowl must be spotless, the egg whites whipped to volume before gradually adding sugar, and the low oven temperature removes water without browning. Cooling inside the oven reduces cracks and preserves the dry texture.
