  1. Cook the potatoes

    Cover the potatoes with cold water, bring to a boil, and cook for 20 to 25 minutes until tender. Drain very well and return to the pan over low heat for 2 minutes, stirring to evaporate the water.

    While still hot, pass the potatoes through a ricer. Mix in 50 g of butter, salt, and pepper. Let cool for 10 minutes, then incorporate the yolks until uniform; do not use a blender.

    Preheat the oven to 210 °C. Place the mash in a sturdy piping bag fitted with a large star tip. Pipe 20 rosettes about 5 cm in diameter onto a lined baking sheet, leaving space between them. Refrigerate for 15 minutes to set the shape.

    Melt the remaining 20 g of butter and gently brush the rosettes without flattening the ridges. Bake for 18 to 22 minutes until the ridges are golden and the base is firm. Serve hot.
