Preparation
Make the dough
Mix flour, salt and sugar; rub in cold butter and add ice water just until the dough holds.

Divide into two disks, wrap and chill for 30 minutes.

Toss sliced apples with sugar, flour, cinnamon and salt.
10 minutesAssemble the pie
Line a 23 cm pan with one disk, add filling and cover with the second disk; seal and vent.

Bake 20 minutes at 220°C, then 40 minutes at 190°C until deeply golden and bubbling.

Cool for at least 2 hours before cutting.
