Seafood paella is a recognized maritime variation of Spain’s iconic rice dish. It cooks uncovered in a wide shallow pan and is never stirred after the rice is spread.

Preparation
Open the mussels
Steam mussels with water until open; strain and reserve the cooking liquid.

Sear squid and shrimp in olive oil and remove before fully cooked.
6 minutesBuild the sofrito
Cook pepper, garlic and grated tomato until concentrated; add paprika.
12 minutesAdd broth and saffron
Add measured mussel liquid and water, salt and infused saffron; bring to a boil.
7 minutesCook rice without stirring
Spread rice evenly and cook first high, then medium-low without stirring.
18 minutesFinish and rest
Return seafood, cook until rice is dry, then rest 5 minutes.
